French Onion Soup

French Onion Soup absolutely rocks !!  This recipe is very easy and 90% is done in the crock pot.  My ingredients are set for 4-5 people and as a main dish. Increase or decrease to fit your needs.
Ingredients
  • 4 medium to large sweet or yellow onions, cut in half then slice into strips.
  • 6 tablespoons unsalted butter, melted
  • 1 tsp white pepper
  • 1 tbl spoon Worcestershire
  • 3 tbl spoons of minced Garlic (Or mince up 3 fresh garlic cloves)
  • 1/2 cup of Cooking Sherry (You can use a dry red or white wine for substitute)
  • 1 tbl spoon of sugar
  • 1/2 tsp dry thyme
  • 1 Bay Leaf
  • Gruyere cheese (mozzarella can be used for substitute but highly recommend getting the Gruyere)
  • Large Butter & Garlic Flavored Bread Crumbs. (Cooked French Bread can be used for alternative) or bake some yourself from a french bread baguette
  • 6-7 Cups of Beef Broth
Directions
  1. Peal an cut your Onions. I Cut the ends off, then cut the onion in half, peel it, then cut into strips. Place cut up onions in Crock Pot.
  2. Add the Butter, white pepper, Worcestershire, thyme, sugar,  sherry (or wine) & Minced Garlic.
  3. Cover Crock Pot and cook on high for 7-8 hours.
  4. After 7-8 hours, the Onions should be brown and caramelized. Add Broth & Bay Leaf. Cook an additional 3 hours on high.
  5. When bubbling, it's pretty much done. Ladle preferred amount into oven safe bowl(s). Add handful of croutons, layer Gruyere cheese and sprinkle some mozzarella (Lightly).  Place in oven on high broil for about 3 minutes. Monitor closely as each over is different. Take out when cheese is bubbling !
